- 1 cup of shredded cheese (cheddar or mozzarella works great!)
- 2 large eggs
- 1/2 cup of breadcrumbs
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- Fresh herbs (like parsley or basil) for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Chop mixed vegetables into bite-sized pieces.
- In a bowl, mix chopped vegetables with cottage cheese, shredded cheese, eggs, breadcrumbs, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture to a greased baking dish and spread evenly.
- Bake for 30-35 minutes until golden brown and bubbly.
- Garnish with fresh herbs, let cool, then slice and serve warm.
