Ingredients

  • 1 cup of cottage cheese
  • 1 cup of shredded cheese (cheddar or mozzarella works great!)
  • 2 large eggs
  • 1/2 cup of breadcrumbs
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • Fresh herbs (like parsley or basil) for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop mixed vegetables into bite-sized pieces.
  3. In a bowl, mix chopped vegetables with cottage cheese, shredded cheese, eggs, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  4. Transfer the mixture to a greased baking dish and spread evenly.
  5. Bake for 30-35 minutes until golden brown and bubbly.
  6. Garnish with fresh herbs, let cool, then slice and serve warm.
