- 1 medium onion, chopped

- 2 celery stalks, diced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat and sauté onion, carrots, and celery for about 5 minutes.
- Add minced garlic, cumin, and smoked paprika; cook for another minute.
- Stir in chickpeas and vegetable broth; bring to a boil, then simmer for 15 minutes.
- Optionally blend some of the soup for a creamier texture.
- Season with salt and pepper, serve hot, and garnish with parsley if desired.
