Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1 vanilla bean, split and scraped
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt
  • Additional sugar for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together butter and sugar until fluffy, then add eggs one at a time along with vanilla bean seeds and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt, then add to wet ingredients alternating with heavy cream until just combined.
  4. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes until a toothpick comes out clean. Cool for 5 minutes, then transfer to a wire rack.
  5. Once cooled, sprinkle sugar on top and caramelize with a kitchen torch or under a broiler until golden.

Notes

  • Ensure not to overmix the batter to keep cupcakes light and fluffy.
  • If using a broiler, watch closely to prevent burning the sugar.
