Instructions

- Blend cream cheese and granulated sugar until smooth; add brown sugar, eggs, vanilla bean paste, and heavy cream, mixing until creamy.
- Pour the cheesecake batter over the cooled crusts, filling each liner 3/4 full.
- Bake for about 20 minutes until centers are set; cool for 10 minutes in the pan, then transfer to a wire rack.
- Once cool, sprinkle sugar on top and brûlée with a torch or under the broiler until crispy.
