Ingredients

- 4 medium sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika (optional)
- 1/4 cup crumbled bacon (optional, but highly recommended!)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and prick the sweet potatoes with a fork.
- Bake sweet potatoes for 45-50 minutes until tender.
- Let cool, cut in half, and scoop out the insides into a bowl.
- Add olive oil, salt, pepper, sour cream, half cheese, green onions, garlic powder, and paprika. Mash until smooth.
- Refill the sweet potato shells with the mixture, top with remaining cheese and bacon.
- Bake for an additional 15-20 minutes until cheese is melted. Serve and enjoy!

- For extra flavor, experiment with different toppings.
- Can be made ahead and reheated before serving.
