Delicious twice-baked sweet potatoes filled with creamy goodness and topped with cheese and bacon.

Ingredients

Scale
  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional)
  • 1/4 cup crumbled bacon (optional, but highly recommended!)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and prick the sweet potatoes with a fork.
  3. Bake sweet potatoes for 45-50 minutes until tender.
  4. Let cool, cut in half, and scoop out the insides into a bowl.
  5. Add olive oil, salt, pepper, sour cream, half cheese, green onions, garlic powder, and paprika. Mash until smooth.
  6. Refill the sweet potato shells with the mixture, top with remaining cheese and bacon.
  7. Bake for an additional 15-20 minutes until cheese is melted. Serve and enjoy!

  • For extra flavor, experiment with different toppings.
  • Can be made ahead and reheated before serving.
