- 2 cups fresh pineapple, diced

- 1 jalapeño, seeded and minced (optional for heat)
- 1/4 cup fresh cilantro, chopped

Instructions
- Peel, core, and dice the fresh pineapple into bite-sized pieces.
- Finely chop the red bell pepper, red onion, and jalapeño.
- In a large bowl, combine the pineapple, red bell pepper, red onion, jalapeño, and cilantro.
- Squeeze lime juice over the mixture.
- Season with salt and black pepper to taste, then stir to combine.
Notes
- For added heat, leave the seeds in the jalapeño.
- Best served fresh but can be stored in the refrigerator for a day or two.
