Ingredients

  • 2 cups fresh pineapple, diced
  • 1/2 cup red bell pepper, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional for heat)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Peel, core, and dice the fresh pineapple into bite-sized pieces.
  2. Finely chop the red bell pepper, red onion, and jalapeño.
  3. In a large bowl, combine the pineapple, red bell pepper, red onion, jalapeño, and cilantro.
  4. Squeeze lime juice over the mixture.
  5. Season with salt and black pepper to taste, then stir to combine.

Notes

  • For added heat, leave the seeds in the jalapeño.
  • Best served fresh but can be stored in the refrigerator for a day or two.
