Ingredients

- 4 slices of your favorite bread (sourdough or brioche works great)
- 3 types of cheese (cheddar, mozzarella, and blue cheese)
- 4 slices of crispy bacon
- Butter (for toasting)
- Salt and pepper to taste
Instructions
- Fry the bacon in a skillet over medium heat until crispy, about 5-7 minutes, flipping halfway.
- Spread butter on one side of each slice of bread.
- On the unbuttered side of two slices, layer cheddar, mozzarella, and blue cheese.
- Place the crispy bacon on top of the cheese layers, then top with the other two slices of bread, buttered side out.
- Grill the sandwich in a skillet over medium heat for 3-4 minutes on each side until golden brown and cheese is melted.
- Remove from skillet, let cool for a minute, slice in half, and serve.
