  • 2 medium zucchinis, sliced into thin rounds
  • 3 cups cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 ounces pasta of your choice
  • Fresh basil leaves, for garnish

Instructions

  1. Boil salted water and cook the pasta according to package instructions, reserving 1/2 cup of pasta water.
  2. Heat olive oil in a skillet, sauté garlic for 30 seconds, then add zucchini and cook for 3-4 minutes.
  3. Add cherry tomatoes, salt, pepper, and red pepper flakes; cook for 5-7 minutes until tomatoes soften.
  4. Add drained pasta to the skillet, tossing with vegetables and reserved pasta water to achieve desired sauce consistency.
  5. Serve warm, garnished with basil and Parmesan cheese if desired.
