- 1 pound ground beef or turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 package (8.5 oz) cornbread mix
- 1 egg
- 1/3 cup milk
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a skillet, sauté ground beef or turkey with onion and garlic until browned.
- Add black beans, corn, and diced tomatoes; stir in spices and simmer for 5 minutes.
- Mix cornbread mix, egg, and milk in a bowl until blended.
- Layer meat mixture in a greased baking dish, then pour cornbread batter on top.
- Bake at 400°F (200°C) for 20-25 minutes until golden brown; add cheese last 5 minutes if desired.
Notes
- Adjust spices to taste for more flavor.
- Can substitute ground turkey for a lighter option.
