Ingredients

  • 1 pound ground beef or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 package (8.5 oz) cornbread mix
  • 1 egg
  • 1/3 cup milk
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a skillet, sauté ground beef or turkey with onion and garlic until browned.
  2. Add black beans, corn, and diced tomatoes; stir in spices and simmer for 5 minutes.
  3. Mix cornbread mix, egg, and milk in a bowl until blended.
  4. Layer meat mixture in a greased baking dish, then pour cornbread batter on top.
  5. Bake at 400°F (200°C) for 20-25 minutes until golden brown; add cheese last 5 minutes if desired.
