Instructions
- Prepare the shrimp by peeling, deveining, rinsing, and patting dry.
- Make the spicy mayo by mixing mayonnaise, sriracha, and lime juice; refrigerate.
- Prepare the batter by whisking flour, baking powder, and salt, then adding ice-cold water until just combined.
- Heat oil in a deep pan to 350°F (175°C).
- Coat each shrimp in the batter, allowing excess to drip off.
- Fry the shrimp in hot oil for 2-3 minutes until golden brown, then drain on paper towels.
- Serve the shrimp on a platter with spicy mayo and optional green onions.
