Instructions

  1. Prepare the shrimp by peeling, deveining, rinsing, and patting dry.
  2. Make the spicy mayo by mixing mayonnaise, sriracha, and lime juice; refrigerate.
  3. Prepare the batter by whisking flour, baking powder, and salt, then adding ice-cold water until just combined.
  4. Heat oil in a deep pan to 350°F (175°C).
  5. Coat each shrimp in the batter, allowing excess to drip off.
  6. Fry the shrimp in hot oil for 2-3 minutes until golden brown, then drain on paper towels.
