To prepare this scrumptious dish, you’ll need the following ingredients:
- 12 jumbo pasta shells
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Fresh cilantro for garnish (optional)
These ingredients are not only easy to find but also perfect for a busy weeknight meal!
Instructions
- Boil salted water, add jumbo pasta shells, cook until al dente, drain, and set aside.
- In a skillet, brown ground beef or turkey, drain fat, then add taco seasoning, salsa, black beans, and corn; stir to combine and heat through.
- Preheat oven to 350°F (175°C). Stuff each shell with taco filling and place in a greased baking dish.
- Sprinkle cheddar and mozzarella cheese on top of the stuffed shells.
- Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
Notes
- Fresh cilantro makes a great garnish if desired.
