To prepare this scrumptious dish, you’ll need the following ingredients:

  • 12 jumbo pasta shells
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Fresh cilantro for garnish (optional)

These ingredients are not only easy to find but also perfect for a busy weeknight meal!

Instructions

  1. Boil salted water, add jumbo pasta shells, cook until al dente, drain, and set aside.
  2. In a skillet, brown ground beef or turkey, drain fat, then add taco seasoning, salsa, black beans, and corn; stir to combine and heat through.
  3. Preheat oven to 350°F (175°C). Stuff each shell with taco filling and place in a greased baking dish.
  4. Sprinkle cheddar and mozzarella cheese on top of the stuffed shells.
  5. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.

Notes

  • Fresh cilantro makes a great garnish if desired.
