- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- ½ cup ranch dressing
- 1 cup crushed tortilla chips
- 1 cup diced tomatoes
- ½ cup chopped green onions
- Salt and pepper to taste
- 1 package mini phyllo pastry cups
Instructions
- Cook ground beef in a skillet over medium heat until browned, breaking it up.
- Add taco seasoning, stir, and simmer for 5 minutes.
- Remove from heat, stir in shredded cheese and ranch dressing until combined.
- Spoon the beef mixture into phyllo cups, packing them generously.
- Top with crushed tortilla chips, diced tomatoes, and chopped green onions.
- Preheat oven to 375°F (190°C), bake for about 15 minutes until golden brown.
Notes
- For a spicier kick, add jalapeños to the topping.
- These can be made ahead and frozen before baking.
