Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then slice them into 1/4-inch thick rounds.
  3. In a bowl, toss the sweet potato slices with olive oil, garlic powder, smoked paprika, salt, and pepper.
  4. Spread the slices on a lined baking sheet and bake for 20 minutes, flipping halfway through.
  5. Sprinkle crumbled feta over the rounds and bake for an additional 10 minutes.
  6. Garnish with parsley and serve warm.
