- 2 large sweet potatoes

Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then slice them into 1/4-inch thick rounds.
- In a bowl, toss the sweet potato slices with olive oil, garlic powder, smoked paprika, salt, and pepper.
- Spread the slices on a lined baking sheet and bake for 20 minutes, flipping halfway through.
- Sprinkle crumbled feta over the rounds and bake for an additional 10 minutes.
- Garnish with parsley and serve warm.
