  • 2 cups elbow macaroni
  • 1 large sweet potato (about 1 cup mashed)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup milk
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Boil salted water and cook elbow macaroni until al dente, then drain.
  2. Peel and cube the sweet potato, boil until tender, then mash until smooth.
  3. In a bowl, mix the mashed sweet potato, milk, sour cream, garlic powder, onion powder, salt, and pepper, then fold in 1.5 cups of shredded cheese.
  4. Stir the cooked macaroni into the cheese mixture until well coated.
