Gather these simple ingredients to create your own Sweet Potato Mac and Cheese:
- 2 cups elbow macaroni
- 1 large sweet potato (about 1 cup mashed)
- 2 cups shredded sharp cheddar cheese
- 1 cup milk
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Boil salted water and cook elbow macaroni until al dente, then drain.
- Peel and cube the sweet potato, boil until tender, then mash until smooth.
- In a bowl, mix the mashed sweet potato, milk, sour cream, garlic powder, onion powder, salt, and pepper, then fold in 1.5 cups of shredded cheese.
- Stir the cooked macaroni into the cheese mixture until well coated.
- Preheat oven to 350°F (175°C), pour mixture into a greased dish, top with remaining cheese and breadcrumbs, and bake for 20-25 minutes.
