- 4 slices of bacon, chopped
- 1 small onion, diced
- 1 red bell pepper, diced
- 4 large eggs

Instructions
- Cook the chopped bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and drain.
- Sauté the diced onion and red bell pepper in the bacon grease for 3-4 minutes until softened.
- Add the sweet potatoes and season with salt and pepper. Cover and cook for 10-15 minutes until tender, stirring occasionally.
- Stir the cooked bacon back into the sweet potato mixture.
- Create four wells in the mixture, crack an egg into each, cover, and cook for 5-7 minutes until eggs are done to your liking.
- Garnish with parsley if desired, serve hot, and enjoy!
