- 8 rice paper wrappers
- 1 cup cooked vermicelli noodles
- 1 cup shredded carrots
- 1 cup sliced bell peppers (any color)
- 1 cup sliced cucumber
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1 avocado, sliced
For the irresistible Thai peanut sauce, you will need:
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey or maple syrup
- 2 tablespoons rice vinegar
- 1 teaspoon sesame oil
- 1–2 tablespoons water (to thin out)
Instructions
- Prepare the ingredients by cooking vermicelli noodles and rinsing them under cold water.
- Make the Thai peanut sauce by mixing peanut butter, soy sauce, honey/maple syrup, rice vinegar, and sesame oil; add water to thin if needed.
- Soften rice paper wrappers by dipping them in warm water for 10-15 seconds and laying them flat.
- Assemble the rolls by layering noodles, veggies, herbs, and avocado on the wrapper.
- Roll the wrapper tightly from the bottom, folding in the sides as you go.
- Serve the rolls with the Thai peanut sauce for dipping.
