Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh peaches, diced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs and melted butter, press into a 9-inch springform pan, and bake for 10 minutes. Cool.
  2. Beat cream cheese until smooth, add sugar, vanilla, and eggs one at a time, then stir in sour cream.
  3. Gently fold in peaches and mixed berries.
  4. Pour batter over the crust and bake for about 50 minutes. Cool in the oven for 1 hour.
  5. Chill in the fridge for at least 4 hours, then slice and serve.
