- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup fresh peaches, diced
- 1 cup mixed berries (strawberries, blueberries, raspberries)
Instructions
- Preheat oven to 325°F (160°C). Combine graham cracker crumbs and melted butter, press into a 9-inch springform pan, and bake for 10 minutes. Cool.
- Beat cream cheese until smooth, add sugar, vanilla, and eggs one at a time, then stir in sour cream.
- Gently fold in peaches and mixed berries.
- Pour batter over the crust and bake for about 50 minutes. Cool in the oven for 1 hour.
- Chill in the fridge for at least 4 hours, then slice and serve.
