- 4 large potatoes, peeled and diced
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1/2 cup cooked bacon bits or sautéed vegetables (like spinach or mushrooms)
- 1/4 cup green onions, chopped
- 1/2 cup breadcrumbs
- 1 large egg
- Salt and pepper to taste
- Oil for frying (vegetable or olive oil works well)
Instructions
- Boil the peeled and diced potatoes in salted water until tender, about 15-20 minutes.
- Drain and mash the cooked potatoes in a bowl until smooth.
- Mix in cheese, bacon bits or veggies, green onions, egg, salt, and pepper until well combined.
- Form the mixture into flat cakes, about 1/2 inch thick.
- Coat each cake in breadcrumbs for crunch.
- Fry the cakes in hot oil over medium heat for 4-5 minutes on each side until golden brown.
- Drain on paper towels and serve hot.
