Description

Delicious stuffed potato cakes filled with cheese and bacon, perfect for a savory snack or side dish.


Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/2 cup cooked bacon bits or sautéed vegetables (like spinach or mushrooms)
  • 1/4 cup green onions, chopped
  • 1/2 cup breadcrumbs
  • 1 large egg
  • Salt and pepper to taste
  • Oil for frying (vegetable or olive oil works well)

Instructions

  1. Boil the peeled and diced potatoes in salted water until tender, about 15-20 minutes.
  2. Drain and mash the cooked potatoes in a bowl until smooth.
  3. Mix in cheese, bacon bits or veggies, green onions, egg, salt, and pepper until well combined.
  4. Form the mixture into flat cakes, about 1/2 inch thick.
  5. Coat each cake in breadcrumbs for crunch.
  6. Fry the cakes in hot oil over medium heat for 4-5 minutes on each side until golden brown.
  7. Drain on paper towels and serve hot.
