- 1 pound ground beef (or turkey)
- 1 cup cooked rice (white or brown)
- 2–3 bell peppers (any color), diced
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Brown the ground beef in a skillet over medium heat for 5-7 minutes; drain excess fat.
- Add diced bell peppers and sauté for 3-4 minutes until softened.
- Mix in the cooked rice, diced tomatoes, tomato sauce, garlic powder, onion powder, salt, and pepper.
- Stir in half of the cheese until melted.
- Transfer to a greased baking dish, top with remaining cheese, and bake at 350°F (175°C) for about 20 minutes until bubbly and golden.
