- 1 cup graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and sliced
- Additional strawberries for garnish
Instructions
- Combine graham cracker crumbs and granulated sugar; mix in melted butter until resembling wet sand.
- Press the crust mixture into lined muffin tins.
- Beat cream cheese until smooth, add powdered sugar and vanilla, and mix well.
- Whip heavy cream until stiff peaks form and fold into the cream cheese mixture.
- Spoon cheesecake filling into crusts and chill for at least 2 hours.
- Slice strawberries and optionally sprinkle with sugar.
- Top chilled cheesecake cups with sliced strawberries and serve.
Notes
- For added sweetness, sprinkle sugar on the strawberries if desired.
- Can be made a day in advance for convenience.
