- 4 large eggs

- 1 bell pepper, diced

Instructions
- Season flank steak with salt and pepper, heat olive oil in a skillet, cook steak for 4-5 minutes on each side, then let rest and slice thinly.
- Sauté diced onion and bell pepper in the same skillet for 3-4 minutes until tender.
- Beat eggs and pour into the skillet, scrambling gently for 3-5 minutes.
- Add sliced steak and sautéed veggies to the scrambled eggs and stir to combine.
- Assemble the burrito by placing the mixture in a tortilla, adding cheese, folding sides, and rolling tightly.
