Instructions
- Preheat the oven to 350°F (175°C).
- Mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.
- In another bowl, combine pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and stir gently until just combined.
- Beat cream cheese and powdered sugar in a separate bowl until smooth.
- Prepare muffin tin, fill with pumpkin batter, add cream cheese filling, and top with more batter.
- Bake for 20-25 minutes, checking with a toothpick for doneness.
- Cool in the tin for 10 minutes, then transfer to a wire rack and enjoy warm.
