Delicious Starbucks-style Pumpkin Cream Cheese Muffins perfect for fall.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.
  3. In another bowl, combine pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined.
  5. Beat cream cheese and powdered sugar in a separate bowl until smooth.
  6. Prepare muffin tin, fill with pumpkin batter, add cream cheese filling, and top with more batter.
  7. Bake for 20-25 minutes, checking with a toothpick for doneness.
  8. Cool in the tin for 10 minutes, then transfer to a wire rack and enjoy warm.
