- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Bring vegetable broth to a boil in a medium saucepan. Add couscous, stir, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
- Chop cucumber, halve cherry tomatoes, and finely chop red onion.
- In a small bowl, whisk olive oil, red wine vinegar, honey, salt, and pepper to make the vinaigrette.
- In a large bowl, combine couscous, vegetables, feta, and parsley. Drizzle with vinaigrette and toss gently to mix.

- For added flavor, let the salad chill in the refrigerator for 30 minutes before serving.
