A fresh and vibrant Spring Couscous Salad with a tangy feta vinaigrette.

Ingredients

  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Bring vegetable broth to a boil in a medium saucepan. Add couscous, stir, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
  2. Chop cucumber, halve cherry tomatoes, and finely chop red onion.
  3. In a small bowl, whisk olive oil, red wine vinegar, honey, salt, and pepper to make the vinaigrette.
  4. In a large bowl, combine couscous, vegetables, feta, and parsley. Drizzle with vinaigrette and toss gently to mix.

Notes

  • For added flavor, let the salad chill in the refrigerator for 30 minutes before serving.
  • This salad can be served as a side dish or a light main course.
