Gather these ingredients to create your Spicy Steak Queso Rice:
- 1 pound of steak (sirloin or flank works best)
- 1 cup of uncooked rice (white or brown)
- 2 cups of beef broth
- 1 cup of queso dip
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced (any color)
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Season steak with salt, pepper, cumin, and chili powder, then heat olive oil in a skillet.
- Sear the steak for 3-4 minutes on each side, then remove and slice after resting.
- Sauté onion and bell pepper in the same skillet for 5-7 minutes, then add garlic and cook for another minute.
- Stir in rice, add beef broth, bring to a boil, then cover and simmer for 20 minutes.
- Mix in queso dip and return sliced steak to the skillet.
- Garnish with cilantro and serve hot.
Notes
- Feel free to adjust the spice level by adding more chili powder.
- Can substitute chicken or tofu for the steak for a different protein option.
