  • 1 pound of steak (sirloin or flank works best)
  • 1 cup of uncooked rice (white or brown)
  • 2 cups of beef broth
  • 1 cup of queso dip
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Season steak with salt, pepper, cumin, and chili powder, then heat olive oil in a skillet.
  2. Sear the steak for 3-4 minutes on each side, then remove and slice after resting.
  3. Sauté onion and bell pepper in the same skillet for 5-7 minutes, then add garlic and cook for another minute.
  4. Stir in rice, add beef broth, bring to a boil, then cover and simmer for 20 minutes.
  5. Mix in queso dip and return sliced steak to the skillet.
  6. Garnish with cilantro and serve hot.
