- 2 cups corn (fresh, frozen, or canned)
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 cup shredded cheese (Cheddar or Monterey Jack work great)
- 1/4 cup chopped green onions
- 1–2 jalapeños, finely chopped (adjust to your spice preference)
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Oil for frying
Instructions
- Prepare the corn by removing kernels if fresh or draining/rinsing if frozen/canned.
- In a mixing bowl, combine flour, cornmeal, baking powder, garlic powder, cumin, salt, and pepper.
- Add corn, cheese, green onions, and jalapeños to the dry mixture and stir until combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of batter into the hot oil and fry for 3-4 minutes on each side until golden brown.
- Drain on paper towels and serve warm with dipping sauce.
