Ingredients

  • 2 cups corn (fresh, frozen, or canned)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/2 cup shredded cheese (Cheddar or Monterey Jack work great)
  • 1/4 cup chopped green onions
  • 12 jalapeños, finely chopped (adjust to your spice preference)
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Prepare the corn by removing kernels if fresh or draining/rinsing if frozen/canned.
  2. In a mixing bowl, combine flour, cornmeal, baking powder, garlic powder, cumin, salt, and pepper.
  3. Add corn, cheese, green onions, and jalapeños to the dry mixture and stir until combined.
  4. Heat oil in a skillet over medium heat.
  5. Drop spoonfuls of batter into the hot oil and fry for 3-4 minutes on each side until golden brown.
  6. Drain on paper towels and serve warm with dipping sauce.
