  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the spaghetti squash by cutting it in half, scooping out seeds, and seasoning with olive oil, salt, and pepper.
  2. Roast the squash cut-side down at 400°F (200°C) for 30-35 minutes until tender.
  3. Mix heavy cream, garlic, cheddar cheese, and half of the Parmesan cheese in a bowl.
  4. Once the squash is done, scrape the insides with a fork to create strands and place them in a bowl.
  5. Add the cheesy mixture to the shredded squash and combine well, then transfer to a greased baking dish.
  6. Top with remaining Parmesan cheese and bake for an additional 15 minutes until golden and bubbly.
