- 4 large russet potatoes
- 1 cup cooked shrimp, chopped
- 1 cup lump crab meat
- ½ cup cream cheese, softened
- ½ cup shredded cheddar cheese
- ¼ cup green onions, chopped
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 400°F (200°C) and wash the potatoes, then pierce them.
- Mix shrimp, crab, cream cheese, cheddar, green onions, mayonnaise, mustard, garlic powder, lemon juice, salt, and pepper in a bowl.
- Bake potatoes for 45 minutes, let cool, then scoop out the insides.
- Add scooped potato flesh to the seafood mixture and fill the potato skins.
- Return filled potatoes to the oven for 15-20 minutes until golden and bubbly.
Notes
- Feel free to adjust seasoning to taste.
- These stuffed potatoes can be prepared in advance and reheated.
