Delicious Southern-Style Seafood Stuffed Potatoes filled with shrimp and crab, perfect for a hearty meal.

Ingredients

  • 4 large russet potatoes
  • 1 cup cooked shrimp, chopped
  • 1 cup lump crab meat
  • ½ cup cream cheese, softened
  • ½ cup shredded cheddar cheese
  • ¼ cup green onions, chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 400°F (200°C) and wash the potatoes, then pierce them.
  2. Mix shrimp, crab, cream cheese, cheddar, green onions, mayonnaise, mustard, garlic powder, lemon juice, salt, and pepper in a bowl.
  3. Bake potatoes for 45 minutes, let cool, then scoop out the insides.
  4. Add scooped potato flesh to the seafood mixture and fill the potato skins.
  5. Return filled potatoes to the oven for 15-20 minutes until golden and bubbly.

  • Feel free to adjust seasoning to taste.
