  • 1 cup almond flour
  • 1/2 cup powdered sugar
  • 1/4 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg, lightly beaten
  • 1/4 cup sliced almonds (for topping)

Instructions

  1. Combine ricotta cheese, almond flour, powdered sugar, all-purpose flour, vanilla extract, almond extract, baking powder, and salt in a bowl.
  2. Fold in the beaten egg until the mixture is smooth.
  3. Scoop and shape the mixture into pillows, placing them on a baking sheet.
  4. Sprinkle sliced almonds on top of each pillow.
  5. Bake at 350°F (175°C) for about 20 minutes until golden.
  6. Cool on a wire rack before serving.
