- 1 cup ricotta cheese
- 1 cup almond flour
- 1/2 cup powdered sugar

- 1/2 tsp almond extract
- 1/2 tsp baking powder

- 1 egg, lightly beaten
- 1/4 cup sliced almonds (for topping)
Instructions
- Combine ricotta cheese, almond flour, powdered sugar, all-purpose flour, vanilla extract, almond extract, baking powder, and salt in a bowl.
- Fold in the beaten egg until the mixture is smooth.
- Scoop and shape the mixture into pillows, placing them on a baking sheet.
- Sprinkle sliced almonds on top of each pillow.
- Bake at 350°F (175°C) for about 20 minutes until golden.
- Cool on a wire rack before serving.
