To create this mouthwatering casserole, you’ll need the following ingredients:

  • 4 bone-in pork chops
  • 4 medium potatoes, thinly sliced
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil

Feel free to experiment with the ingredients. As a mom, I love adding extra veggies when I can. Carrots or peas work wonderfully in this dish!

Instructions

  1. Heat olive oil in a skillet and season pork chops with salt, pepper, and thyme; sear for 4-5 minutes on each side and set aside.
  2. Sauté diced onions and minced garlic in the same skillet until onions are translucent.
  3. In a greased baking dish, layer half of the sliced potatoes, followed by the seared pork chops, sautéed onions and garlic, and remaining potatoes.
  4. Mix heavy cream and chicken broth, then pour over the layered casserole.
  5. Cover with foil and bake at 350°F (175°C) for 45 minutes; remove foil, add cheese, and bake for an additional 15 minutes until golden.
