Ingredients

  • 4 medium cucumbers
  • ½ cup shelled pistachios
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Wash and slice cucumbers in half lengthwise, scooping out some seeds.
  2. Gently smash the cucumbers with a meat mallet or heavy pan until cracked but intact.
  3. Whisk together rice vinegar, sesame oil, soy sauce, and honey for dressing; season to taste.
  4. Combine smashed cucumbers and pistachios in a bowl, drizzle with dressing, and toss gently.
  5. Chill in refrigerator for at least 30 minutes, then garnish with cilantro before serving.

Notes

  • Adjust sweetness of the dressing by adding more honey if desired.
