Instructions
- Wash and slice cucumbers in half lengthwise, scooping out some seeds.
- Gently smash the cucumbers with a meat mallet or heavy pan until cracked but intact.
- Whisk together rice vinegar, sesame oil, soy sauce, and honey for dressing; season to taste.
- Combine smashed cucumbers and pistachios in a bowl, drizzle with dressing, and toss gently.
- Chill in refrigerator for at least 30 minutes, then garnish with cilantro before serving.
Notes
- Adjust sweetness of the dressing by adding more honey if desired.
- Salad tastes best when chilled for a while before serving.
