  • 2 lbs of potatoes (Yukon Gold works wonders!)
  • 1/3 cup of extra virgin olive oil
  • 1/3 cup of fresh lemon juice
  • 4 cloves of garlic, minced
  • 1 tablespoon of dried oregano
  • Salt and pepper to taste
  • 1 cup of chicken or vegetable broth

Instructions

  1. Wash, peel, and cut potatoes into wedges.
  2. Mix olive oil, lemon juice, garlic, and oregano in a bowl.
  3. Toss potato wedges in the marinade.
  4. Preheat oven to 400°F (200°C) and arrange potatoes on a baking tray. Pour broth over them.
  5. Roast potatoes until golden and serve hot.
