Before you start, gather these simple ingredients from your pantry and fridge:
- 2 lbs of potatoes (Yukon Gold works wonders!)
- 1/3 cup of extra virgin olive oil
- 1/3 cup of fresh lemon juice
- 4 cloves of garlic, minced
- 1 tablespoon of dried oregano
- Salt and pepper to taste
- 1 cup of chicken or vegetable broth
Instructions
- Wash, peel, and cut potatoes into wedges.
- Mix olive oil, lemon juice, garlic, and oregano in a bowl.
- Toss potato wedges in the marinade.
- Preheat oven to 400°F (200°C) and arrange potatoes on a baking tray. Pour broth over them.
- Roast potatoes until golden and serve hot.
Notes
- Yukon Gold potatoes are recommended for best results.
- Adjust salt and pepper to your taste preferences.
