  • 34 pounds pork shoulder or pork loin
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon olive oil
  • 1 cup low-sodium chicken broth
  • Salt and pepper, to taste
  • 1 tablespoon Dijon mustard (optional)

Instructions

  1. Pat the pork dry and season with salt and pepper.
  2. Mix garlic, rosemary, thyme, and olive oil to create a paste and coat the pork.
  3. Pour chicken broth into the slow cooker and whisk in Dijon mustard if using.
  4. Place the pork in the slow cooker on top of the broth.
  5. Cook on low for about 8 hours or high for 4 hours.
  6. Shred the pork and serve with the broth.
