- 1 pound ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- 1 cup diced bell peppers (any color)
- 1 cup diced onions
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: sour cream and green onions for garnish
Instructions
- Brown the ground meat in a skillet with olive oil.
- Combine the cooked meat, black beans, corn, diced tomatoes, bell peppers, onions, and taco seasoning in a large bowl.
- Transfer the mixture to the slow cooker and spread evenly.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add shredded cheese on top and cover until melted.

- Optional garnishes include sour cream and green onions.
