Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup sliced mushrooms
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet and sauté onion and garlic until fragrant.
  2. Season chicken with salt, pepper, and thyme, then place in the slow cooker.
  3. Add sautéed onions, garlic, mushrooms, Marsala wine, and chicken broth to the slow cooker.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Remove chicken, rest, then slice or shred and serve with sauce over pasta or mashed potatoes.
