- 1 pound boneless, skinless chicken breasts
- 2 cups pasta (penne or rotini work well)
- 1 can (15 oz) diced tomatoes
- 1 cup chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
Instructions
- Place chicken breasts at the bottom of the slow cooker.
- Sprinkle chopped onion and minced garlic over the chicken.
- Add canned diced tomatoes and chicken broth; season with Italian seasoning, salt, and pepper.
- Cover and cook on low for 4-6 hours or high for 2-3 hours.
- About 30 minutes before serving, stir in the pasta.
- Sprinkle shredded mozzarella cheese on top, cover, and let it melt for 5 minutes.
