Ingredients

  • 2 pounds of beef chuck roast
  • 1 cup of beef broth
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 cups of carrots, sliced
  • 2 cups of potatoes, diced
  • 1 tablespoon of Worcestershire sauce
  • 1 teaspoon of dried thyme
  • Salt and pepper, to taste
  • 2 tablespoons of cornstarch (optional, for thickening)

Instructions

  1. Season beef chuck roast with salt and pepper.
  2. Optional: Sear the beef in a pan over medium heat for about 4-5 minutes on each side.
  3. Place beef in slow cooker and add onion, garlic, carrots, potatoes, beef broth, Worcestershire sauce, and thyme.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. Optional: Thicken the gravy by mixing cornstarch with water and stirring it into the slow cooker, then cook for another 30 minutes on high.
  6. Serve over mashed potatoes and enjoy!

Notes

  • For a richer flavor, searing the beef is recommended but not necessary.
