Ingredients

- 2 pounds of beef chuck roast
- 1 cup of beef broth
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 cups of carrots, sliced
- 2 cups of potatoes, diced
- 1 tablespoon of Worcestershire sauce
- 1 teaspoon of dried thyme
- Salt and pepper, to taste
- 2 tablespoons of cornstarch (optional, for thickening)
Instructions
- Season beef chuck roast with salt and pepper.
- Optional: Sear the beef in a pan over medium heat for about 4-5 minutes on each side.
- Place beef in slow cooker and add onion, garlic, carrots, potatoes, beef broth, Worcestershire sauce, and thyme.
- Cover and cook on low for 8 hours or high for 4 hours.
- Optional: Thicken the gravy by mixing cornstarch with water and stirring it into the slow cooker, then cook for another 30 minutes on high.
- Serve over mashed potatoes and enjoy!
Notes
- For a richer flavor, searing the beef is recommended but not necessary.
- Adjust seasoning according to taste.
