- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 packages of ramen noodles (discard the seasoning packets)
- 1 cup sliced carrots
- 1 cup chopped bell peppers
- 1 cup snap peas
- 3 green onions, sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat sesame oil in a skillet, season chicken with salt and pepper, and sear for 5-7 minutes on each side.
- Remove chicken and sauté carrots, bell peppers, and snap peas for 4-5 minutes.
- Add chicken broth to the skillet and bring to a simmer.
- Cook ramen noodles in the simmering broth for 3-4 minutes.
- Slice the chicken, add back to the skillet with soy sauce, and cook for another minute.
- Serve hot, garnished with green onions and cilantro.
Notes
- Feel free to add other vegetables according to your preference.
- For a spicier kick, consider adding chili flakes or sriracha.
