Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 packages of ramen noodles (discard the seasoning packets)
  • 1 cup sliced carrots
  • 1 cup chopped bell peppers
  • 1 cup snap peas
  • 3 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat sesame oil in a skillet, season chicken with salt and pepper, and sear for 5-7 minutes on each side.
  2. Remove chicken and sauté carrots, bell peppers, and snap peas for 4-5 minutes.
  3. Add chicken broth to the skillet and bring to a simmer.
  4. Cook ramen noodles in the simmering broth for 3-4 minutes.
  5. Slice the chicken, add back to the skillet with soy sauce, and cook for another minute.
  6. Serve hot, garnished with green onions and cilantro.

Notes

  • Feel free to add other vegetables according to your preference.
  • For a spicier kick, consider adding chili flakes or sriracha.
