- 6 large eggs

- 1 cup cooked and crumbled breakfast sausage or bacon (optional)
- 1/2 cup diced bell peppers

- Salt and pepper to taste
- 1/4 cup salsa for topping

Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk eggs with salt and pepper. Sauté onions and bell peppers in a skillet until soft; add sausage or bacon if using.
- Pour the egg mixture into the skillet and cook until just set, stirring frequently.
- Assemble tacos by filling tortillas with the egg mixture, sprinkling cheese, and folding them in half. Place in a baking dish.
- Bake for about 20 minutes until tortillas are crispy and cheese is melted.
- Serve warm with salsa and garnish with cilantro if desired.
