Ingredients

  • 8 small corn or flour tortillas
  • 6 large eggs
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1 cup cooked and crumbled breakfast sausage or bacon (optional)
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • 1/4 cup salsa for topping
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk eggs with salt and pepper. Sauté onions and bell peppers in a skillet until soft; add sausage or bacon if using.
  3. Pour the egg mixture into the skillet and cook until just set, stirring frequently.
  4. Assemble tacos by filling tortillas with the egg mixture, sprinkling cheese, and folding them in half. Place in a baking dish.
  5. Bake for about 20 minutes until tortillas are crispy and cheese is melted.
  6. Serve warm with salsa and garnish with cilantro if desired.
