- 4 medium zucchinis
- 1 pound large shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional)
- 1 lemon, juiced and zested

- ¼ cup fresh parsley, chopped
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 400°F (200°C) and prepare zucchinis by cutting them in half and scooping out seeds.
- Sauté garlic in olive oil, then add shrimp and cook until pink; mix in lemon juice.
- Add lemon zest, parsley, salt, and pepper to the shrimp mixture and stir.
- Stuff zucchini halves with the shrimp mixture.
- Top with mozzarella cheese and bake for 15-20 minutes until zucchini is tender and cheese is bubbly.
- Let cool slightly, garnish with parsley, and serve warm.
