  • 4 medium zucchinis
  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • ¼ cup fresh parsley, chopped
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C) and prepare zucchinis by cutting them in half and scooping out seeds.
  2. Sauté garlic in olive oil, then add shrimp and cook until pink; mix in lemon juice.
  3. Add lemon zest, parsley, salt, and pepper to the shrimp mixture and stir.
  4. Stuff zucchini halves with the shrimp mixture.
  5. Top with mozzarella cheese and bake for 15-20 minutes until zucchini is tender and cheese is bubbly.
  6. Let cool slightly, garnish with parsley, and serve warm.
