Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Green onions, chopped (for garnish)

Instructions

  1. Prepare the ingredients: Dice the onion, bell pepper, celery, and mince the garlic.
  2. In a skillet, heat olive oil and cook the sausage until browned.
  3. Add the vegetables and sauté until softened, then add garlic and cook for another minute.
  4. Stir in the rice and let it soak up flavors for 2 minutes.
  5. Add broth, Cajun seasoning, thyme, and bay leaf; bring to a boil and reduce heat.
  6. Cover and simmer for 15 minutes until liquid is absorbed and rice is tender.
  7. Add shrimp, cover, and cook for 5 minutes until shrimp are pink.
  8. Fluff rice with a fork, season with salt and pepper, and garnish with green onions before serving.

Notes

  • Adjust the spice level by adding more or less Cajun seasoning.
  • For a healthier version, use turkey sausage or reduce the oil.
