- 1 cup long-grain rice
- 2 cups chicken broth
- 1 pound shrimp, peeled and deveined
- 1 pound smoked sausage, sliced
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
- Green onions, chopped (for garnish)
Instructions
- Prepare the ingredients: Dice the onion, bell pepper, celery, and mince the garlic.
- In a skillet, heat olive oil and cook the sausage until browned.
- Add the vegetables and sauté until softened, then add garlic and cook for another minute.
- Stir in the rice and let it soak up flavors for 2 minutes.
- Add broth, Cajun seasoning, thyme, and bay leaf; bring to a boil and reduce heat.
- Cover and simmer for 15 minutes until liquid is absorbed and rice is tender.
- Add shrimp, cover, and cook for 5 minutes until shrimp are pink.
- Fluff rice with a fork, season with salt and pepper, and garnish with green onions before serving.
Notes
- Adjust the spice level by adding more or less Cajun seasoning.
- For a healthier version, use turkey sausage or reduce the oil.
