Ingredients

  • 8 oz shrimp, peeled and deveined
  • 4 slices of your favorite bread (sourdough or ciabatta work great)
  • 4 slices of cheddar cheese
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Season the shrimp with salt and pepper, then cook in olive oil over medium heat for 2-3 minutes on each side until pink and opaque.
  2. Mix softened butter with minced garlic to create garlic butter.
  3. Spread garlic butter on one side of each bread slice, layer cheese and shrimp, and top with another slice of bread.
  4. Grill the sandwich on medium heat for 3-4 minutes on each side until golden brown and cheese is melted.
  5. Prepare garlic bread with leftover garlic butter and serve alongside the sandwich.
