- 1 cup cooked shrimp, chopped
- 1 cup lump crab meat
- 1 cup bell peppers, sliced (any color)
- 1 medium onion, sliced
- 1 tablespoon fajita seasoning
- 1 cup cream cheese, softened
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- Cooking spray or olive oil
- Fresh cilantro, for garnish
Instructions
- Sauté sliced bell peppers and onion in olive oil until soft.
- Mix cooked shrimp, crab meat, sautéed vegetables, and fajita seasoning in a bowl.
- Spread cream cheese on each tortilla.
- Spoon the shrimp and crab mixture onto the tortillas.
- Roll up the tortillas, tucking in the sides.
- Place roll-ups seam side down in a greased baking dish, sprinkle with cheese, and bake at 375°F for 15-20 minutes.
