Ingredients

- 1 pound of shrimp, peeled and deveined
- 2 cups of cooked rice
- 1 cup of cheddar cheese, shredded
- 1 can of cream of mushroom soup
- 1 cup of frozen peas and carrots
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 350°F (175°C).
- Sauté shrimp in olive oil for 3-4 minutes until pink.
- In a bowl, mix rice, shrimp, soup, peas and carrots, garlic powder, salt, and pepper.
- Fold in half of the cheddar cheese.
- Transfer to a greased casserole dish, top with remaining cheese, and bake for 25-30 minutes.
- Cool slightly, garnish with parsley, and serve.
