A creamy and savory shrimp casserole that’s easy to make and perfect for any occasion.

Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 2 cups of cooked rice
  • 1 cup of cheddar cheese, shredded
  • 1 can of cream of mushroom soup
  • 1 cup of frozen peas and carrots
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sauté shrimp in olive oil for 3-4 minutes until pink.
  3. In a bowl, mix rice, shrimp, soup, peas and carrots, garlic powder, salt, and pepper.
  4. Fold in half of the cheddar cheese.
  5. Transfer to a greased casserole dish, top with remaining cheese, and bake for 25-30 minutes.
  6. Cool slightly, garnish with parsley, and serve.
