Instructions
- Chop the shrimp into small pieces, being careful not to over-process.
- In a bowl, mix chopped shrimp with breadcrumbs, mayonnaise, Dijon mustard, egg, Old Bay seasoning, green onions, lemon juice, salt, and pepper.
- Shape the mixture into small patties, about 2-3 inches in diameter.
- Heat vegetable oil in a skillet and fry the cakes for 3-4 minutes on each side until golden brown.
- Drain on paper towels and serve hot with a dipping sauce.
Notes
- Using panko breadcrumbs adds extra crunch to the cakes.
