A delicious shrimp and spinach casserole that’s easy to make and perfect for any occasion.

Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 2 cups of fresh spinach, chopped
  • 1 cup of cooked rice (white or brown)
  • 1 cup of cream of mushroom soup
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of milk
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • 1 teaspoon of olive oil
  • 1/2 teaspoon of paprika (optional, for a kick!)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté shrimp with salt, pepper, and paprika for 3-4 minutes until pink.
  3. In a bowl, mix cooked rice, sautéed shrimp, spinach, soup, milk, garlic powder, onion powder, and half the cheese.
  4. Transfer the mixture to a greased baking dish, spread evenly, and top with remaining cheese.
  5. Bake for 25-30 minutes until cheese is bubbly and golden brown.

Notes

  • Feel free to add more vegetables like bell peppers for extra flavor.
  • Leftovers can be stored in the refrigerator for up to 3 days.
