Ingredients

- 1 pound of shrimp, peeled and deveined
- 2 cups of fresh spinach, chopped
- 1 cup of cooked rice (white or brown)
- 1 cup of cream of mushroom soup
- 1 cup of shredded cheddar cheese
- 1/2 cup of milk
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- 1 teaspoon of olive oil
- 1/2 teaspoon of paprika (optional, for a kick!)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil and sauté shrimp with salt, pepper, and paprika for 3-4 minutes until pink.
- In a bowl, mix cooked rice, sautéed shrimp, spinach, soup, milk, garlic powder, onion powder, and half the cheese.
- Transfer the mixture to a greased baking dish, spread evenly, and top with remaining cheese.
- Bake for 25-30 minutes until cheese is bubbly and golden brown.
Notes
- Feel free to add more vegetables like bell peppers for extra flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
