- 1 cup of stone-ground grits
- 4 cups of water or chicken broth
- 1 pound of shrimp, peeled and deveined
- 1 cup of chopped scallions
- 1 cup of shredded cheddar cheese
- 2 tablespoons of butter
- Salt and pepper to taste
- 1 tablespoon of olive oil
- Optional: hot sauce for extra kick
Instructions
- Bring water or chicken broth to a boil in a large pot. Gradually whisk in grits and simmer for 15-20 minutes, stirring occasionally.
- Stir in butter, cheese, salt, and pepper once grits are thick and creamy until cheese melts.
- In a skillet, heat olive oil, cook shrimp for 2-3 minutes on each side, adding scallions in the last minute.
- Spoon cheesy grits into cups, top with shrimp and scallions, and drizzle with hot sauce if desired.
- Serve warm and enjoy!
