Ingredients

  • 1 cup of stone-ground grits
  • 4 cups of water or chicken broth
  • 1 pound of shrimp, peeled and deveined
  • 1 cup of chopped scallions
  • 1 cup of shredded cheddar cheese
  • 2 tablespoons of butter
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • Optional: hot sauce for extra kick

Instructions

  1. Bring water or chicken broth to a boil in a large pot. Gradually whisk in grits and simmer for 15-20 minutes, stirring occasionally.
  2. Stir in butter, cheese, salt, and pepper once grits are thick and creamy until cheese melts.
  3. In a skillet, heat olive oil, cook shrimp for 2-3 minutes on each side, adding scallions in the last minute.
  4. Spoon cheesy grits into cups, top with shrimp and scallions, and drizzle with hot sauce if desired.
  5. Serve warm and enjoy!
