Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 bell pepper, diced
  • 1 red onion, sliced
  • 2 cups baby potatoes, halved
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut four pieces of heavy-duty aluminum foil, about 12 inches long.
  3. In a large bowl, mix shrimp, sausage, bell pepper, onion, and baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  4. Divide the mixture among the foil pieces and fold to create tight packets.
  5. Place the packs on a baking sheet and bake for 25 minutes until shrimp is pink and potatoes are tender.
  6. Unwrap the packs carefully, garnish with parsley, and serve hot.
