- 1 cup cooked rice (preferably cold)
- 1 pound shrimp, peeled and deveined
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/4 cup green onions, chopped
- 1 large egg
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- Oil for frying (canola or olive oil works best)
- Lemon wedges for serving
Instructions
- Sauté minced garlic in oil until fragrant.
- Add shrimp, season, and cook until pink; chop into small pieces.
- Mix rice, shrimp, Parmesan, green onions, egg, and breadcrumbs in a bowl.
- Form the mixture into small patties.
- Fry patties in hot oil until golden brown on both sides.
- Drain on paper towels and serve with lemon wedges.
Notes
- Make sure the rice is cold for better binding.
- Adjust seasoning according to taste.
