Delicious shrimp and garlic Parmesan rice cakes, crispy on the outside and flavorful inside.

Ingredients

  • 1 cup cooked rice (preferably cold)
  • 1 pound shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup green onions, chopped
  • 1 large egg
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste
  • Oil for frying (canola or olive oil works best)
  • Lemon wedges for serving

Instructions

  1. Sauté minced garlic in oil until fragrant.
  2. Add shrimp, season, and cook until pink; chop into small pieces.
  3. Mix rice, shrimp, Parmesan, green onions, egg, and breadcrumbs in a bowl.
  4. Form the mixture into small patties.
  5. Fry patties in hot oil until golden brown on both sides.
  6. Drain on paper towels and serve with lemon wedges.

Notes

  • Make sure the rice is cold for better binding.
  • Adjust seasoning according to taste.
