- Preheat the oven to 375°F (190°C).
- Wash and prepare the bell peppers by cutting off the tops and removing the seeds.
- In a skillet, heat olive oil, sauté onion and garlic, then add shrimp and cook until pink. Stir in crab meat, rice, paprika, salt, and pepper.
- Mix half the mozzarella and breadcrumbs into the seafood mixture.
- Stuff the mixture into the bell peppers and top with remaining mozzarella.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 5-10 minutes.
- Garnish with parsley and serve.
