A quick and flavorful shrimp stir-fry with asparagus and mushrooms, perfect for a weeknight meal.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 8 ounces mushrooms, sliced (button or shiitake work well)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil or sesame oil
  • 1 teaspoon ginger, minced (fresh or powdered)
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

Instructions

  1. Prep all ingredients: wash and cut asparagus, slice mushrooms, mince garlic and ginger.
  2. Heat oil in a large skillet or wok over medium-high heat.
  3. Add minced garlic and ginger, sauté for 30 seconds until fragrant.
  4. Stir in shrimp, cooking until pink and opaque (2-3 minutes).
  5. Add asparagus and mushrooms; cook for another 3-4 minutes until tender.
  6. Pour soy sauce over stir-fry, mix well, and serve over rice or noodles.

Notes

  • Feel free to substitute other vegetables based on your preference.
  • For extra flavor, add a pinch of red pepper flakes or sesame seeds before serving.
