Ingredients

- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 8 ounces mushrooms, sliced (button or shiitake work well)
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil or sesame oil
- 1 teaspoon ginger, minced (fresh or powdered)
- Salt and pepper to taste
- Cooked rice or noodles, for serving
Instructions
- Prep all ingredients: wash and cut asparagus, slice mushrooms, mince garlic and ginger.
- Heat oil in a large skillet or wok over medium-high heat.
- Add minced garlic and ginger, sauté for 30 seconds until fragrant.
- Stir in shrimp, cooking until pink and opaque (2-3 minutes).
- Add asparagus and mushrooms; cook for another 3-4 minutes until tender.
- Pour soy sauce over stir-fry, mix well, and serve over rice or noodles.
Notes
- Feel free to substitute other vegetables based on your preference.
- For extra flavor, add a pinch of red pepper flakes or sesame seeds before serving.
